My daughter was diagnosed with Celiac disease around 3 years ago.. Being of Hispanic heritage one of our staples used is the flour. Not being able to eat mexican sweet bread, flour tortillas and the like was very devastating to her and she would take a bite of what she is not suppose to eat.
We have looked and looked for white bread to make sandwiches but never found a good one. All the gluten free bread that we had found was very “dense” and dry. One day my daughter went to “Jason Deli” in Pasadena, TX and they were advertising that they had “gluten-free bread.” They gave her a sample of Udi’s and that was it. She found the perfect sandwich bread.
