For the love of bread!
When I was first told that my extreme vertigo (along with years of digestive issues) was caused by "wheat allergy" I was skeptical, but went on a gluten free diet. What did I miss most? pasta, biscuits, pancakes, cookies? No to all of the above. I missed BREAD!! Toasted cheese sandwiches, cinnamon toast, peanut butter toast, bagels w/cream cheese… I found some frozen gluten free bread in the neighborhood grocery and was so thrilled. Until I took a bite. YUCK! I couldn’t even keep it in my mouth. So then I tried to make my own bread. The first recipe was for a flat bread that was barely edible. My next two attempts were worse; the bread was dense and gummy. I HATE experimenting with food! And the squirrels didn’t even eat it. I was desperate and decided to eat regular bread. Then someone suggested that I try Udi’s bread. Oh JOY! The first two slices made the best cinnamon toast I’ve since going gluten free. Not only does it taste good, but it has good mouth feel. It’s airy and soft, and not gummy at all. And when it’s toasted it feels like toast and tastes like toast, not hardened gumminess.
