What's Your Gluten Free Grilled Cheese Style?

Grilled Cheese for the CarnivoreGluten Free Grilled Cheese

Apple, Ham, & Cheddar Grilled Cheese
Makes: 2 sandwiches

  • 4 Slices Udi’s Whole Grain Bread
  • 1/8 pound (2 slices) of Applegate Farms Sliced Ham
  • 1/2 small Granny Smith Apple, cut into ½-inch-thick slices
  • 3oz Cheddar Cheese, grated
  • Butter


Grilled Cheese for the Lactose Free

 Grilled Caprese Sandwich

Makes: 2 sandwiches

  • 4 Slices Udi’s Millet Chia Bread
  • 8oz Daiya Shredded Mozzarella Cheese
  • 2 Roma Tomatoes, sliced
  • Fresh Basil Leaves
  • Butter


Grilled Cheese for the Vegetarian

Hot Chile Grilled Cheese Sandwich

Makes: 2 sandwiches

  • 4 Slices Udi’s White Sandwich Bread
  • 2 Poblano Peppers, sliced & cooked (remove seeds & stem)
  • 1 ½ tablespoon Pace Chunky Salsa
  • ¼ cup shredded Monterey Jack or Cheddar Cheese
  • 7oz canned Pinto Beans, smashed
  • 1 ½ fresh Scallions, chopped
  • 1 tablespoon fresh cilantro, chopped
  • 1 tablespoon Stonyfield Organic Plain Yogurt
  • Butter

    Our family’s favorite grilled cheese is with sliced left-over meatballs from our spaghetti and meatball meal. We spread a thing coat of spaghetti sauce on the Udi’s bread or roll first. Slice meatballs as thin as possible without them falling apart, we make our own meatballs with Udi’s bread crumbs. Then add a nice slice of onion on top of that with your own choice of cheese. And grill as usual with butter or a little olive oil brushed on the bread is even better. Bon Appetite’

    Add a slice of onion to your grilled cheese. Really sparks it up.

    I appreciate your recipes, but could not try them myself. I have an allergy to milk protein (dairy), and even have to avoid pork, due to its tendency to give me headaches. Soy has a similar effect. My daughter has a serious allergy (anaphylactic) to dairy, in addition to allergies to oats and barley. My closest friend, who is celiac, also has to avoid dairy and corn. Many ‘gluten-free recipes’ include these factors which my family and friends have to avoid.

    My solution has been to purchase bread and baked goods from a local gluten-free bakery, and to substitute ‘Daiya’ for cheese in my recipes. Perhaps you could come to an agreement with the manufacturers of Daiya, to create recipes in partnership.
