Frozen Summertime Treats {Gluten Free}

Summer is a special time to enjoy the gorgeous, fresh flavors of the season.  With an abundance of natural ingredients to choose from, eating gluten free can be a snap this time of year.  I love to take advantage of all the great produce available for cool summertime treats.

Summer drives a natural propensity towards clean, chilled desserts.  Forgo the starchy, warm, heavy desserts cool weather invites and take the oven out of the equation.  Below are 3 simple dessert ideas for when you are craving something sweet this season:

Fruity Lemonade Pops

Not only are these pops delicious and simple; but also beautiful with minimal planning or work.  All you need to do is slice colorful fruit and freeze to get these pops ready.

Ingredients:

  • ½ cup of berries and thinly sliced, colorful fruit (think kiwi, peaches, lemons, and oranges)
  • ¾ cup water
  • 3 teaspoons fresh lemon juice
  • 2 tablespoons simple syrup or sugar substitute
  • If you are short on time, simply substitute ¾ cup lemonade in place of the water, lemon juice, and sugar.

Directions:

  1. Wash and dry fruit.  Keep berries whole and set aside.  Thinly slice the rest of your fruit into small slivers.
  2. Mix together water, lemon juice, and simple syrup.  If  using pre-made lemonade, skip this step.
  3.  Fill popsicle molds or small glasses/ jars to  halfway with lemonade.
  4. Drop in berries and layer in sliced fruit until each mold/ cup is filled to the rim with juice and fruit mixture.
  5. Place popsicle sticks into each cup.  The more fruit you have layered the easier it will be to place upright popsicle sticks into the mold.
  6. Freeze popsicles overnight.
  7. Take popsicles out of freezer and enjoy right away.  Tip- if you have any trouble removing popsicles from the molds just run under hot water for a few seconds.

 

Watermelon & Apple Sundae

Ice-cream sundaes are a must for summer.  And while some may enjoy theirs out of a waffle bowl, we’ve got an even better, all natural way for you to cart around your fresh treat.

Ingredients:

  • 2 large Granny Smith apples
  • 1 ½ cup watermelon ice-cream or sorbet

Directions:

  1. Wash and dry apples.
  2. Cut each apple in half, along the width of the fruit.
  3. Using a knife or a sharp spoon, core out each apple half, leaving about 1/8 inch of skin.

Udi’s Ice-cream Sandwich

Udi’s Gluten Free Chocolate Chip Cookies and vanilla ice-cream make a perfect mini sandwich.  We bet you can’t stop at just one!

Ingredients:

Directions:

  1. Freeze cookies so they are hard and cold.
  2. Take cookies out and arrange half, smooth side up, on a large platter.
  3. Place a spoonful of ice-cream in the center of each cookie.
  4. Top the ice-cream with additional cookie, smooth side down.
  5. Lightly press cookies together to stick.
  6. Place ice-cream sandwiches in freezer overnight.
