<p>You are going about your merry way, crossing things off your &#8220;To-do&#8221; list, when it happens&#8230; The &#8220;Hangry Monster&#8221; hits. You know, the feeling? (Hangry- the dreadful combination of hungry and angry that overtakes all rational thought when you become overly hungry.)</p>
<p>&nbsp;</p>
<p>I will be the first to admit that I am not a nice person when I am hungry, and learned at an early age to carry a snack with me at all times. As I have grown, my version of &#8220;snacks&#8221; has changed somewhat. Instead of focusing on mere calories, I try to make sure my go-to snacks have some sort of nutritional value, like protein and fiber.</p>
<p>&nbsp;</p>

<p>For a week of healthy snacking, I recommend taking 30 minutes on the weekend to prep and pack your snacks for the week. That way, they are ready to grab as you run out the door. Snacks like:</p>
<ol>
<li>Gluten Free Crackers and Hummus</li>
<li>Carrot &amp; Celery Sticks with Individual Squeeze Packs of Nut Butter</li>
<li>Raw Almonds or seasoned peanuts/cashews.</li>
<li>Any type of fruit, such as bananas, apples, oranges, pears, etc.</li>
<ul>
<li>You can also freeze fruits such as grapes for a refreshing sweet snack!</li>
</ul>
<li>String Cheese</li>
<li><a href="http://udisglutenfree.com/product-category/granola/" target="_blank"><span style="text-decoration: underline;">Udi&#8217;s Granola Clusters</span></a></li>

<p>We all know that all too familiar New Year’s Resolution path.  You make numerous goals about staying healthier, eating right, cooking more &amp; committing to your diet.  Initially the excitement of setting these new goals and knowing that amazing results can happen keep you motivated!  All of a sudden, two weeks have flown by and you have one little slip up.  One slip up turns to two, two to three and the next thing you know, you’re passing through the drive through to pick up a quick, guilt ridden, but oh so delicious, dinner!</p>
<p>Well I’m here to help! Together we’ll stay on track with these simple yet healthy tips &amp; recipes that will ensure you continue the year off on the right foot!</p>
<p>First thing&#8217;s first, start every day with a good breakfast.  Many people tend to eat that first meal later in the morning and I used to be one of them.  There would even be times where I would just wait till lunch to grab a bigger meal. Unfortunately, this is definitely not a good habit to have.  It is crucial to give your body the proper nutrition right off the bat and that also includes hydrating!  Try to drink a full glass of water first thing in the morning.  The higher the ph the better!  My “go to” breakfast has become organic free range eggs, a few slices of turkey bacon or smoked salmon, and a banana.  It’s great brain food to start the day off and easy for your body to digest as you&#8217;re still waking up.  Another great day starter would be my favorite smoothie</p>

<h3>Blueberry Banana Carrot Smoothie</h3>

<ul>
<li>1 ripe banana, cut into 2 chunks</li>
<li>1 cup of fresh blueberries</li>
<li>1 cup cool water</li>
<li>½ cup carrot juice</li>
<li>¾ cup almond milk</li>
<li>1 tablespoon raw almond butter</li>
<li>tablespoon flaxseeds</li>
<li>Add Vega One plant based protein powder as an extra source of protein</li>
</ul>
<p><em>Directions:</em></p>
<p>Simply add all ingredients together in your blender and mix until a smooth consistency forms. You can also opt to add frozen blueberries and bananas instead to create a more icy texture. Then add in a mid/late morning Udi’s muffin of your choice! (Lemon Streusel, Blueberry, Chocolate)</p>
<p>&nbsp;</p>
<p>Lunch is another time of the day where it’s easy to sabotage your otherwise healthy diet.  Either you didn’t plan your lunch or you’re tired of the only relatively nutritious options around you, and other the other nearby option start to seem more appealing.  This is when Fast Food becomes really convenient. My solution to this is keeping an arsenal of Udi’s handy in your office.  As long as you have your Udi’s bread of choice, you can mix and match all sorts of sandwiches.  Turkey/Chicken, avocado, tomato or a Tuna Salad sandwich with some gluten free chips will satisfy most!  Then for a little change up, check out my recipe for my protein bagel (<a href="http://udisglutenfree.com/recipes/matts-protein-bagel/"><em><span>Matt’s Protein Bag</span>el</em></a>) on the Udi’s website.  It includes the Udi’s cinnamon raisin bagel and raw almond butter spread topped with sliced up bananas (will make you say YUMMM)!  Juice bars are also popping up everywhere these days and maybe your area has one!  There is nothing wrong with an afternoon juice cleanse!</p>
<p>I look at dinner as the time to get creative.  There are plenty of great GF recipes out there and Udi’s shares a lot of them on their website!  Also on all their social media pages so be sure to follow!  Here is my “go to” dinner on a regular basis.  This dish is nothing more than a petite fiesta!!</p>

<h3>Mahi Mahi Tacos</h3>
<p><em>Ingredients:</em></p>
<ul>
<li>Sliced up chunky guacamole</li>
<li>Pico De Gallo</li>
<li>Lime</li>
<li>Organic Corn Tortillas</li>
<li>4 ounce mahi mahi steak(s)</li>
<li>tablespoon olive oil</li>
<li>teaspoon of salt</li>
<li>1 teaspoon chili powder</li>
<li>1 teaspoon paprika</li>
<li>½ teaspoon garlic powder</li>
</ul>
<p><em>Directions:</em></p>
<p>Heat oil in a large skillet over medium heat, place fish in skillet. Partially cover skillet, cook 4 to 5 minutes, flip over and cook other side 3-4 minutes while reducing heat.</p>

<p>I simply can’t think of anything more comforting on a cold winter&#8217;s day than nice steaming bowl of beef stew. It warms you up from the inside out and will fill the house with delicious  soul-warming, aromas! This time a year many of us also resolve to live a little healthier and for this reason I have made a couple of healthy tweaks to my traditional beef stew. Instead of loading up my stew with potatoes, I chose to use a  rutabaga which is lower in carbs and adds a wonderful flavor. Also, thanks to<a href="http://udisglutenfree.com/product-category/breads-rolls-buns/" target="_blank"><span style="text-decoration: underline;"> Udi’s classic French Dinner Rolls</span> and<span style="text-decoration: underline;"> Whole Grain Seeded Dinner Rolls</span></a>,  I can now once again enjoy a nice crusty roll to dip into the stew!<br />

<h3>Megan&#8217;s Healthy Beef Stew</h3>

<p><strong>Ingredients:</strong></p>
<ul>
<li>Ingredients:</li>
<li>2 lbs top sirloin cut into bite sized cubes</li>
<li>1 rutabaga</li>
<li>4 Carrots</li>
<li>5 Celery Stalks</li>
<li>1 Medium Onion</li>
<li>1 package Frozen peas</li>
<li>Salt and pepper</li>
<li>2 TBS cornstarch</li>
<li>2 TBS Worcestershire sauce</li>
<li>2 TBS tomato paste or ketchup</li>
<li>2-4 32 oz containers of beef broth depending on the size of your stock or crock pot.</li>
<li>Beef Stock</li>
<li>2 Tbs Vegetable oil</li>
</ul>
<p><strong>Directions:</strong></p>
<ol>
<li>Toss the beef cubes in the cornstarch  Then sear them, over high heat, in a large frying pan. You&#8217;ll just want to brown the outside of the beef, it is not necessary to cook the meat all the way through.</li>
<li>After that the rest is easy! Simply combine the rest of the ingredients ( minus the peas, if you add them right away they will get mushy) in the crock pot and leave on low for 8 hours.</li>
<li>Add the peas ½ hour before you are going to eat and heat through.</li>
<li>If the base isn&#8217;t as thick as you would like you can always add a bit more cornstarch at to thicken it up! ( I usually make a slurry in a small bowl with a few TBS of cornstarch and some of the beef broth to make sure it adds nicely to the stew with no clumps! And don’t forget to check the seasoning periodically throughout the cooking process.</li>

<h3>Bacon-Wrapped Dates</h3>
<p>Bacon, dates and cheese. This delectable appetizer combines sweet, creamy, and bacon—the ultimate combination, if you ask me!</p>
<p>Ingredients:</p>
<ul>

<li>1 (approx 5 oz) container goat cheese</li>
<li>10-12 almonds</li>
<li>10-12 strips of uncooked bacon</li>
<li>Honey</li>

<li>Pit the dates and stuff inside with goat cheese.  Top goat cheese with one almond per date.</li>
<li>Fry the bacon, being careful not to over-crisp it (the bacon has to be soft enough to wrap around the dates).</li>
<li>Wrap one strip of bacon around each date.</li>
<li>Drizzle with honey, stick a toothpick down the center, and serve.</li>

<p>Bruschetta is a staple appetizer in my house, and it can be made gluten-free so easily that no one will ever know!</p>
<p>Ingredients:</p>

<li>2 lbs. fresh tomatoes (of any flavorful type)</li>
<li>½ cup sun-dried tomatoes, with oil</li>
<li>½ a medium-sized onion, finely chopped<a href="http://udisglutenfree.com/wp-content/uploads/2013/01/French-Baguettes-Rendering.jpg"><img class="alignright  wp-image-4767" title="French Baguettes -Rendering" src="http://udisglutenfree.com/wp-content/uploads/2013/01/French-Baguettes-Rendering.jpg" alt="" width="270" height="208" /></a></li>
<li>4 cloves garlic, minced</li>
<li>1 tbsp fresh basil, chopped</li>
<li>4 tbsp extra virgin olive oil, + a little extra to drizzle on top</li>
<li>2 tbsp balsamic vinegar</li>
<li>Salt and pepper</li>
<li>Pinch of cayenne pepper</li>

<p>*Found at select grocery stores nationwide.  If not in your area, substitute Udi’s Gluten Free White Sandwich bread, cut in small circles, with crusts removed.  Will generally require 4-5 slices of bread.</p>

<ol>
<li>Preheat oven to broil setting.</li>
<li>Chop fresh tomatoes.  In a large mixing bowl, combine with sun-dried tomatoes and their oil, onion, garlic, basil, olive oil, and balsamic vinegar.  Liberally sprinkle with salt and pepper, and add a small pinch of cayenne to spice things up a bit.</li>
<li>Cut 2 Udi’s baguettes into small, thin slices and arrange on a baking sheet.  Broil for 1 to 2 minutes, being careful not to burn the bread, until golden brown and slightly crispy.</li>
<li>Top baguette slices with a couple spoonfuls of tomato mixture.  Drizzle a little olive oil on top and serve.</li>

<h3>Caramel Pretzel Delight</h3>
<p>Try this for a dessert-type appetizer or an afternoon snack—great with a sweet dessert wine!</p>
<p>Ingredients:</p>

<li>1 bag Rolos (or similar meltable caramel chocolate candy)</li>
<li>1 bag almonds</li>
<li>Parchment paper</li>
</ul>

<ol>
<li>Preheat oven to 350 degrees.</li>
<li>Place parchment paper over baking tray, and spread Glutino pretzel twists out in a single layer.</li>
<li>Place one Rolo candy on top of each pretzel.</li>
<li>Bake for 5-10 minutes, or until Rolos are soft when pressed.  Remove tray from oven, and press Rolos down until partially melted over pretzels.  Place almond on top.  Serve and enjoy!</li>

<p>Let me preface this article with a little background on how I became a GF travel expert. My job is 90% travel, I live out of my suitcase and have been doing so for close to 4 years. I also have Celiac Disease. With such an active travel schedule, getting sick is not an option. I have learned a few tricks to keep gluten away so I can play.</p>

<li><span style="text-decoration: underline; color: #000080;"> <a href="http://www.findmeglutenfree.com/"><span style="color: #000080; text-decoration: underline;"><strong>Find Me Gluten Free</strong></span></a></span> &#8211; This free App is an excellent resource for finding area restaurants that are able to accommodate a gluten-free diet. The App even allows you to narrow your search by specifying restaurants with gluten-free, vegetarian, and dairy-free friendly menus!</li>
<li><span style="color: #000080;"><a href="http://www.lightmyfire.com/products/wild-kitchen-collection/spork/spork-original.aspx" target="_blank"><span style="text-decoration: underline; color: #000080;"> <strong><span style="color: #000080; text-decoration: underline;">Light My Fire Camping Spork and a B</span><span style="text-decoration: underline;">ow</span>l</strong></span></a></span>- A safe restaurant is not always within reach. When this happens, survival mode kicks in. It is amazing what culinary delights can be created in a hotel room with little more than a coffee pot and a Spork! This all in one utensil slices, dices, spears, and scoops, and has saved me on many occasions.</li>
<li><span style="color: #000080;"><strong>Can Opener</strong></span> &#8211; You never know when you will need to open a can. Trust me on this one.</li>
<li><span style="color: #000080;"><strong>Protein Powder and Bars</strong></span> &#8211; Easily transported and healthy, protein powders and bars are a quick meal in a pinch.</li>
<li><span style="color: #000080;"><strong>Tuna Fish</strong></span> &#8211; Whether canned or a pouch, plain tuna is an easy, throw in your bag, meal that can dress up even the saddest of garden salads.</li>
<li><span style="color: #000080;"><strong>Grocery Stores</strong></span> &#8211; It&#8217;s not the most glamorous dining establishment, but it is the safest. Find your nearest grocery store and stock up on prewashed lettuce, salsa, hummus, gluten-free crackers, tuna, and fruit. If you are staying in a hotel, ask for a mini-fridge to keep your food fresh.</li>
</ol>
<p>&nbsp;</p>
<p>These days, I tend to bypass the restaurants in favor of a local natural food store where I am able to buy fresh ingredients to make amazing salads (Southwestern Salads made of greens, vegetables, tofu, and topped with salsa are my favorite). Sometimes, though, I crave something warm and comforting, like soup. A microwave isn&#8217;t always available, so I have learned to make Chicken Vegetable soup in a coffee pot. Yes, you read that correctly. Here is my recipe. Next time you are feeling particularly &#8220;road warrior-esque&#8221; give it a try!</p>

<h3 style="text-align: center;">Coffee Pot Chicken Vegetable Soup</h3>
<p align="center"><em>(Gluten-free, Dairy-free)</em></p>
<p><strong>Ingredients:</strong><a href="http://udisglutenfree.com/wp-content/uploads/2012/12/coffee.jpg"><img class="alignright  wp-image-4589" title="Coffee jug" src="http://udisglutenfree.com/wp-content/uploads/2012/12/coffee.jpg" alt="" width="347" height="260" /></a></p>
<ul>
<li>1 <em>8oz</em> container Chicken Broth</li>
<li>1/2 cup frozen Vegetables, defrosted</li>
<li>1 can cooked Chicken Breast Meat, drained</li>
<li>Salt &amp;Pepper, to taste</li>
</ul>
<p>&nbsp;</p>
<p><strong>Directions:</strong></p>
<p>1. Clean out the coffee pot by running water through it 2-3 times.</p>
<p>2. Place the defrosted vegetables and the chicken in the coffee pot carafe and place the carafe back on the warming pad.</p>
<p>3. Pour the chicken stock into the coffee pot&#8217;s water chamber.</p>
<p>4. Turn on the coffee pot and percolate the chicken broth through the machine and into the pot, as if you we&#8217;re making coffee.</p>
<p>5. Once the brew cycle is complete, the soup will be hot and ready.</p>
<p>6. Season with salt &amp; pepper, to taste.</p>

<h4 style="text-align: center;">If you have a gluten intolerance or other food sensitivity, we’ve assembled five steps that will ensure that you too will have a super jolly holiday season!</h4>
<p>&nbsp;</p>
<p><strong>Communicate</strong></p>
<ul>
<li>The first time I was invited to my friend’s house for Christmas, I was terrified. I figured I would eat beforehand and gnaw on a few veggies while at the dinner. However, a few weeks before the big day, I decided to call my friend to talk over the menu and discuss which options would be safe for me. She had no problem using Udi’s bread for the stuffing (check out this great recipe <a href="http://udisglutenfree.com/recipes/udi-s-gluten-free-stuffing-recipe/">here</a>!) and almond milk for the mashed sweet potatoes. I was able to eat like a queen, thanks to just a simple phone conversation.</li>
</ul>
<p><strong>Know the secret culprits</strong></p>
<ul>
<li>Spice blends? Gravy packets? Salad dressings? Cross contaminated dishes and utensils? Make sure to double check all spice blends and sauces, as they can often use flours or other mysterious “natural flavors.” You may want to bring your own gravy and salad dressing to safely compliment your host’s dishes. </ul>
<p><strong>Create a plan</strong><a href="http://udisglutenfree.com/wp-content/uploads/2012/12/hanukkah2.jpg"><img class="alignright  wp-image-4500" title="hanukkah2" src="http://udisglutenfree.com/wp-content/uploads/2012/12/hanukkah2.jpg" alt="" width="203" height="306" /></a></p>
<ul>
<li>Whether it’s Hanukkah, Christmas, or any other celebration, holidays can be hectic. Make sure you have a clear plan of where you are eating and when. This will help the hosts make sure they can accommodate you and, most importantly, avoid cross contamination (a random aunt may just dip into your special gf stuffing without knowing that it’s just for you!).</li>
</ul>
<p><strong>Start cooking!</strong></p>
<ul>
<li>One of the easiest ways to guarantee a flawless and plentiful holiday meal is to bring a dish or two to the celebration. I recommend bringing something that is normally full of gluten, such as a sweet bread or pie. Depending on how ambitious you are this time of year, you can also host the holiday gathering yourself and you’ll be guaranteed a safe and plentiful feast.</li>
</ul>
<p><strong>Lastly, take time to educate</strong></p>
<ul>
<li>While you are blissfully enjoying your gluten friendly meal, make sure to talk to others about your dietary needs. This is a perfect opportunity to raise awareness about gluten sensitivities and explain to your friends and family what it all entails. The more they understand this issue, the better they will be able to accommodate you at future festivities!</li>
</ul>

You may be pleasantly surprised by how many asterisks or “GF” notations you can now find on menus throughout the country. Servers are more aware of gluten sensitivities and many chefs will follow the necessary procedures to avoid cross-contamination.  Here are a few guidelines to follow when visiting your favorite restaurant to see if they’ve adopted to the new gluten free world and help ensure your meal will indeed be gluten free.</p>

<p>Second, your server is a great resource to inform you about the restaurant’s allergy-friendly menu options and kitchen practices.  Here are a few important questions you will want to ask him or her:</p>
<ol>
<li><span style="text-decoration: underline;">I am gluten-free, can you accommodate me?</span>  Not only is this polite, it will also give you a feel for how much your server knows about gluten-free.  If they point you to the salad options (which, you notice, have croutons and thick dressings), it may be time to ask a few more questions!  If they hand you a dedicated gluten-free menu or “Celiac” menu- you are all set!</li>
<li><span style="text-decoration: underline;">Does your kitchen have a station dedicated to gluten-free preparation?</span>   This question is quite revealing- if the answer is “Yes”, chances are, the chef is not only familiar with gluten-free foods, but is actively avoiding cross-contamination.  Look for an explanation here; most servers will proudly outline the precautions the restaurant takes.  Your server may have to check with the chef, which shows their desire to accommodate you.  If your server seems hesitant with an answer you may want to dig a little deeper.</li>
<li><span style="text-decoration: underline;">Are you familiar with cross- contamination?</span>   Look for solid answers here. A good server will explain how the chef avoids cross-contamination and the kitchen procedures they abide by.</li>
</ol>

<p>Although your server should be your main source of information, there are also key words it dish descriptions that often contain gluten and should warrant a red flag:</p>

<li>Fried</li>
<li>Battered</li>
<li>Creamy</li>
<li>Encrusted</li>
<li>Dusted</li>
</ul>
<p>Marinades, gravy, sauces and dressings also pose potential “gluten traps”.  Some restaurants will have separate fryers and certified GF ingredients, sauces, and toppings; just make certain of this before ordering.</p>
<p>&nbsp;</p>
<p>Lastly, and most importantly, make sure you feel comfortable eating at the restaurant. Your gut may tell you something long before you consume your meal.  Remember, restaurants are in business to serve and accommodate as much as they possibly can. More often than not, they’ll be more than happy to ensure that your meal safe, delicious, and enjoyable!</p>

<li>2 large portabella mushrooms, sliced</li>
<li>½ tsp. freshly ground black pepper</li>
<li>½ tsp. garlic powder</li>
<li>¼ tsp. ground nutmeg</li>
<li>1/3 cup dairy or non-dairy sour cream</li>

<li>Preheat oven to 400° F. If using fresh beans, boil in lightly salted water for 5 minutes, rinse with cold water and drain. If using canned beans, rinse and set aside.</li>
<li>In a large saucepan, melt the butter and toss in sliced mushrooms and pepper. Stir over medium heat for 5 minutes, then add spices and flour, stirring to coat. Cook an additional minute then add the sour cream and soup and lower the heat to medium-low.</li>
<li>Cook while the mixture thickens, approximately 5-8 minutes more. Remove from heat and stir in half of the fried onions and all of the drained beans. Pour mixture into a large casserole and cook for 10 minutes, or until bubbly. Sprinkle the remaining onions on top and bake for an additional 5 minutes. Serve warm.</li>

<li>If using broth, double check the ingredient for gluten.</li>
<li>Use pure spices instead of spice mixes since these often contain gluten. Try creating your own mixture of dried sage, thyme, parsley, salt, and pepper!</li>
<li>If you’re adding meats, like sausage, double check to make sure there’s no gluten added</li>

<li>Salt &amp; Pepper</li>
<li>1 cup of unsalted butter or margarine2 onions (or 1 large onion)</li>
<li>1/2 cup of chopped fennel</li>
<li>1/2 cup of chopped celery</li>
<li>2 large eggs, lightly beaten</li>
<li>1 cup low sodium chicken broth</li>
<li>1/2 cup heavy cream</li>
</ul>
<p>&nbsp;</p>
<p><em>Directions:</em></p>
<ol start="1">
<li>Lightly butter each side of Udi&#8217;s Gluten Free Whole Grain &amp; White Sandwich breads.</li>
<li>Broil Udi&#8217;s Gluten Free Whole Grain &amp; White Sandwich Bread till slightly brown/toasted. Allow bread to cool completely on a wire rack.</li>
<li>Put bread in a Ziploc bag and slightly break toasted bread into bread crumbs (or cut into pieces). Place in bowl with parsley, sage, salt and pepper.</li>
<li>Melt butter in a 12-inch heavy skillet over medium heat; add onions and saute until onions are softened. Add fennel and celery, stirring occasionally until vegetables are soft.</li>
<li>Transfer vegetables to bowl with the toasted Udi’s gluten free bread crumbs. Add eggs, stock, cream and gently toss.</li>
<li>Transfer mixture to a buttered shallow baking dish. Bake, covered, in middle of oven for 30 minutes at 325 degrees. To brown the stuffing, uncover and bake for an additional 20 minutes.</li>

<li>2 Loaves of Udi’s Sandwich Bread. You can use on white and one whole grain loaf, or for a heartier stuffing, try using Udi’s Millet-Chia sandwich bread instead of the Whole Grain bread.</li>
<li><strong>Note: </strong>Do the end pieces of the bread get left behind in your family? Start saving them in a plastic bag freezer bag until you’re ready to make your stuffing.</li>

<li>Spread bread slices on cookie sheets. For optimum results, do not stack or overlap slices. Leave out on the counter, uncovered, for 1-2 hours.</li>
<li>Preheat oven to 250. Bake for 10-12 minutes, checking frequently. You want the bread to be crumbly and golden brown, but not burnt.</li>
<li>Take bread out of the oven when done and crumble by hand into a large mixing bowl. You could also do this in a food processor, but I find the hand-crumbling to be more fun!</li>
<li>Enjoy! Use these bread crumbs to make some delicious gluten free stuffing for Thanksgiving.</li>

<h3 style="text-align: center;"><span style="text-decoration: underline;"> Sweet Potato Casserole</span></h3>
<p>This Thanksgiving favorite only needs two swaps to ensure its gluten free!</p>

<li>Most sweet potato casseroles have sugary toppings that contain all-purpose wheat flour. You can easily substitute this flour with a gluten free variety such as <a href="http://www.glutino.com/our-products/gluten-free-pantry/beths-all-purpose-gf-baking-flour-us/">Gluten Free Pantry’s All-Purpose GF Baking Flour.</a></li>
<li>If you’ve opted to top you’re casserole with some sweet marshmallows, make sure you use gluten-free marshmallows. Most are considered gluten free, like <a href="http://www.kraftrecipes.com/products/jet-puffed.aspx">Kraft marshmallows</a>, but when in doubt—call the company.</li>

<li>1/3 c. rice flour</li>
<li>1/3 c. melted butter</li>

<li>Set oven to 350.</li>

<li>Mash (by hand) or with the whisk attach­ment of a stand mixer, mix yams with eggs, but­ter, agave, salt, vanilla and 1/2 tsp. cin­na­mon for about 45 sec­onds, until smooth. Don’t worry about a few lumps.</li>
<li>Spread mix­ture into 8×8 casse­role pan, smooth­ing the top. Mix pecans, brown sugar, rice flour and melted but­ter together until thor­oughly com­bined. Sprin­kle evenly on top of yams (or sub­sti­tute marsh­mal­lows or a com­bi­na­tion of both) and bake for 15–20 minutes.</li>

<p>Did you know that today, November 15<sup>th</sup>, is officially <strong><em>“National Clean Out Your Refrigerator Day”</em></strong>?</p>
<p>This tedious chore is something most of us dread and often put off until that odd smell is simply no longer tolerable! But, that mystery dish hiding in the back right corner of your fridge that’s covered in a thin layer of fur and changing colors daily can be a serious health risk!</p>
<p>So we encourage you to see this national holiday as the perfect opportunity to de-clutter , sanitize and make room for those inevitable holiday leftovers.</p>
<p>Below are some steps to help you tackle your overflowing refrigerator and ensure it’s a gluten free haven for all your delicious grub:</p>
<p>&nbsp;</p>
<p><strong>Cleaning your fridge can be like going in to battle! You’ll need:</strong></p>
<ul>
<li>A large, heavy duty, trash bag.</li>
<li>Bucket with warm water and mild detergent</li>
<li>A sponge</li>
<li>A roll of paper towels or clean dry kitchen towel to wipe shelves after cleaning.</li>
<li>Optional: gloves (may depend on how severe the state of your fridge is).</li>
</ul>
<p>&nbsp;</p>
<p><strong>Ideally you should clean your refrigerator once a month or immediately after accidental spills.</strong></p>
<ul>
<li>Wipe down all shelves and drawers with your warm water and soap mixture. Dry shelves with paper towels or dry towel to remove moisture and soap residue.</li>
<li>Make sure to set your refrigerator temperature between 34 and 40 degrees.</li>
<li>Don’t forget your freezer!</li>

<p><strong>Chuck all foods passed their prime in your trash bag.</strong></p>

<li>If you have gluten-free and gluten-filled items in your fridge make sure to keep them on separate shelves.</li>

<h3>The Turkey</h3>
<ul>
<li>Make sure to purchase a 100% gluten-free turkey. Many frozen birds have been injected with gluten-filled liquids to ensure they stay moist when thawed out.</li>
<li>We recommend selecting a free-range turkey to ensure its 100% gluten free (and extra delicious).</li>
