<p>Last week we were excited and honored to be part of the 33<sup>rd</sup> annual <span style="text-decoration: underline; color: #000080;"><a href="http://www.expowest.com/ew13/public/enter.aspx" target="_blank"><span style="color: #000080; text-decoration: underline;">Natural Products Expo West</span></a></span> in Anaheim, California. With 63,000 industry members in attendance and 2,428 exhibiting companies, the event was a whirlwind of exciting new companies, products, and special appearances.</p>
<p>This year Udi’s was fortunate to present more exciting new and delicious gluten free products than ever.</p>
<p><strong>Our New Product Showcase consisted of&#8230;</strong></p>

<p><a href="http://udisglutenfree.com/wp-content/uploads/2013/03/photo.jpg"><img class="alignleft  wp-image-5273" title="photo" src="http://udisglutenfree.com/wp-content/uploads/2013/03/photo.jpg" alt="" width="248" height="248" /></a>In additional to the numerous new gluten free treats we got to share with the world, this particular Expo was special in another way; it marked the first time that we sponsored this event with our two sister companies, <span style="text-decoration: underline; color: #000080;"><strong><em><a href="http://www.glutino.com/" target="_blank">Glutino</a></em></strong></span> and <span style="text-decoration: underline; color: #000080;"><strong><em><a href="http://www.earthbalancenatural.com/" target="_blank">Earth Balance</a></em></strong></span>. Together we hosted a delicious gluten free and vegan breakfast to kick of this year’s exhibition.</p>
<p>Throughout the weekend we also fed the hungry attendees with our Mighty Bagels and Everything Inside Bagels that were topped with Earth Balance’s Peanut Butter and Culinary Spreads.</p>
<p>&nbsp;</p>
<p>And it didn&#8217;t end there! At our booth, attendees were able to sample some of our brand new products. The morning started off with granola clusters served with vanilla yogurt and our nutritious granola bars. Lunch was an absolute hit when we served cheese and roasted red pepper quesadillas using our soft flour tortillas. For those who were dairy-free, we were lucky enough to be able to offer a <span style="text-decoration: underline;"><a href="http://www.goveggiefoods.com/" target="_blank">GoVeggie</a></span> option. Our new ancient grain chips also made an appearance. Whether you preferred Sea Salt or Aged Cheddar, once you tried one your just couldn&#8217;t stop! We ended the day with our brand new and oh so delicious, cookies. All three flavors are irresistible which was proven by our continuous need to refill our sampling tray.</p>

<p>We were so excited to be able to return to Park City, UT, for the 2013 Sundance film festival. Our goal this year was to spread gluten freedom even further by filling the ravenous stomachs of Sundance attendees with delicious, soul warming, gluten free treats.</p>
<p>In order to do this, we erected our very own temporary restaurant on Main St. called the Udi&#8217;s Gluten Free Table. It quickly became a popular venue  celebrities and other Sundance visitors looking for food, fun and a refuge from the cold weather. We offered an exclusively gluten free menu to celebrity guests and tastemakers featuring our signature products combined with a variety of high-quality produce, meats and cheeses that were produced locally.</p>

<h3>Cranberry Walnut Tapenade</h3>
<p>I love this recipe because it&#8217;s so easy, yet comes across as gourmet. Ordinary tapenade is made with olives, garlic and red peppers, we’ve taken this concept and made it a bit more festive by adding cranberries and toasted walnuts.</p>
<p>Ingredients:</p>

<li>1 ¼ cup marinated olives (green works best for this recipe but a batch of mixed olives is fine too)</li>
<li>1 tablespoon roasted garlic, crushed</li>
<li>1/3 cup roasted walnuts</li>
<li>¼ cup dried cranberries, chopped</li>
<li>2 tablespoons olive oil</li>
<li>Pinch of salt</li>
<li>Teaspoon lemon juice</li>
</ul>
<p>Instructions:</p>
<ol>
<li>Heat a skillet over medium high heat on the stove. Do not add oil. Add walnuts and stir constantly for 3-5 minutes until toasted and browned.</li>
<li>Once cooled, place walnuts in a resalable bag and crush with rolling pin or heavy cup.</li>
<li>Pour olives, garlic, olive oil, salt, and lemon into a food processor and pulse until thoroughly combined.</li>
<li>Add walnuts and pulse until just mixed.</li>
<li>Pour in cranberries and mix for an additional 10-15 seconds. For a more course mixture pulse until just combined.</li>
<li>Serve mixture with toasted <a href="http://udisglutenfree.com/products/french-baguettes/">Udi’s French Baguettes.</a></li>
<li>Optional- Melt goat cheese on baguettes and then layer with Olive Tapenade.</li>

<p style="text-align: left;">This savory stuffing was featured in our gluten free cooking class with <span style="text-decoration: underline;"><a href="http://www.cooklaonline.com/" target="_blank"><strong>CookLA</strong></a></span> and a favorite of <a href="https://encinomom.com/gluten-free-stuffing-recipe/"><strong><span style="text-decoration: underline;">Encino Mom</span>!</strong></a><strong> </strong>Chef Liz did a great job combining sweet and salty flavors to create this hearty yet delicate stuffing. There really are no words to describe it…just try it!</p>
<p>Ingredients: (Serves 12)</p>
<ul>
<li>6 cups Udi’s Whole Grain Bread, toasted until dry</li>
<li>1 pound Chorizo or <span style="text-decoration: underline;"><a href="http://www.food52.com/recipes/ingredient/sweet-Italian-sausage">Sweet Italian Sausage, casings removed</a></span></li>
<li>1 stick unsalted butter</li>
<li>3 tart (Granny Smith) apples peeled, cored, and chopped into bite size pieces</li>
<li>6 cups leeks, white parts only, sliced into ¼-inch to ½-inch rounds</li>
<li>2 cups celery, chopped into ½-inch pieces</li>
<li>¼ cup dried apricots, soaked in water and chopped</li>
<li>¼ cup dried black currants, soaked in water</li>
<li>4 teaspoons <em>Knorr</em> chicken bouillon (GF product)</li>
<li>2 teaspoons fresh rosemary, roughly chopped</li>
<li>1 teaspoon fresh sage, roughly chopped</li>
<li>4 tablespoons garlic, minced</li>
<li>1 1/3 cup chicken stock</li>
<li>Salt and White pepper to taste</li>
<li>¼ teaspoon ground allspice</li>
</ul>

<p>Directions:</p>
<ol>
<li>Preheat oven to 350 degrees F.</li>
<li>In a large pan, cook sausage until browned and crumbled.</li>
<li>Remove from pan, set aside, and drain grease with a paper towel.</li>
<li>In the same pan, melt the stick of butter and add the apples, celery, leeks, and poultry seasoning.</li>
<li>Sauté until vegetables soften and start to brown, approximately 8-10 minutes.</li>
<li>Add the rosemary, sage, garlic, apricots, black currants, and cooked sausage, mix all ingredients together well.</li>
<li>Break bread into bite-size pieces. Stir in the dried bread until combined.</li>
<li>Season to taste with salt and pepper. Pour chicken stock over all to moisten.</li>
<li>Bake in a buttered casserole dish, covered, for 35 minutes.</li>
<li>Uncover and bake for another 15 minutes on the top rack of the oven to brown the stuffing.</li>

<p>Meet <strong>John Montagu;</strong> 18<sup>th </sup>century English aristocrat and 4<sup>th</sup>Earl of Sandwich. This great man was responsible for the invention and popularization of our beloved and oh-so-versatile ‘sandwich’. To commemorate his birth and incredible contribution to society, November 3<sup>rd</sup> has been deemed <strong>National Sandwich Day</strong>! This innovative concept came to Montagu while participating in a 24-hour gambling event. Hunger struck and, still needing use of at least one hand, he instructed his servant to bring him meat tucked between two pieces of bread. From that day on the transportable and utterly satisfying sandwich became a lunchtime favorite.</p>

<p>Here at Udi’s we LOVE a good sandwich and, in celebration of John Montagu’s timeless invention, we want to share some of our favorite, deliciously unique, and utterly satisfying sandwich recipes!</p>

<li>2 lbs lean ground beef or turkey</li>
<li>1/4 chopped onion (optional)</li>
<li>2 cups Chicken Gumbo Soup</li>
<li>1/4 Cup Brown Sugar</li>
<li>1/4 Cup Ketchup</li>
<li>1 Tbsp Mustard</li>
<li>Sliced pickles for topping</li>
</ul>
<p>&nbsp;</p>
<p><em>Directions:</em></p>
<ol>
<li>Brown meat and chopped onion in a skillet over medium heat. Drain grease.</li>
<li>Add the Chicken Gumbo Soup, ¼ cup of Brown Sugar, ¼ cup of Ketchup, and 1 tbsp of Mustard to the meat mixture. Stir together and let simmer for 1/2 hour (or heat in slow cooker).</li>
<li>Increase brown sugar, ketchup and mustard to desired quantities after taste test.</li>
<li>Simply place scoop of the mixture on a bun, add pickles and ENJOY!!!</li>

<p>When preparing ice cream sandwiches for a larger party we recommend scooping out single serving size ice cream balls ahead of time. Place all ice cream balls on large sheet pan and refreeze. This will make assembling the ice cream sandwich a much easier task.</p>
<p>When ready to serve pair the following cookies and ice cream flavors and squeeze together:</p>
<ul>
<li>Snickerdoodle Cookies with Pumpkin Ice Cream</li>
<li>Chocolate Chip Cookies with Vanilla Ice Cream</li>
<li>Snickerdoodle Cookies with Lemon Ice Cream &amp; Blackberry Sorbet (for this sandwich you must use half of scoop of each ice cream flavor to create filling)</li>

<h3 style="text-align: center;">Grilled Portabella Mushroom and Pesto Sandwich</h3>

<p><em>Ingredients:</em></p>
<ul>
<li>2 Slices <span style="text-decoration: underline;"><a href="http://bit.ly/PGDMfv">Udi’s Gluten Free Bread</a></span></li>
<li>3 or 4 marinated fresh mozzarella cheese balls</li>
<li>1 medium to large Portabella mushroom</li>
<li>1 Tomato slice</li>
<li>1 Tbsp Pesto</li>
</ul>
<p><em>Directions: </em></p>
<ol>
<li>Pre-heat grill to medium. Clean mushroom with wet paper towel and pull off the stem.</li>
<li>Use some of the marinade from the mozzarella balls and brush both sides of the mushroom. Do the same with your slices of bread.</li>
<li>Thinly slice mozzarella balls. Slice a tomato (I use one slice per mushroom).</li>
<li>Take all your ingredients to the grill (including pesto). First grill your mushroom on medium heat about 2 min, then flip. When both sides are grilled, turn the mushroom so that the side that had the stem is up and spread pesto on the mushroom. Add cheese.</li>
<li>Grill bread on both sides until golden brown. When cheese is melted, put tomato slice on top. Put mushroom between toasted bread. Enjoy!</li>

<li>Place sandwiches in pan and grill until golden browned on bottom, flip over and cook second side until golden brown. Enjoy!</li>

<h4>Halloween is coming up—the favorite holiday of ghouls, ghosts, and kids alike! All of us at Udi’s love Halloween, especially when it’s safe and full of yummy gluten free treats. Read on for some safety tips and tricks, gluten free candy guidelines, and a few fun recipes.</h4>
<p>&nbsp;</p>
<h3>How to keep your little ghosts and goblins safe:</h3>
<ol>
<li>Plan your route in advance, and stay in familiar areas. If your town has a curfew for trick-or-treating, stick to those designated times.</li>
<li>Go trick-or-treating in a group and, especially for younger children, always have a responsible adult present.</li>
<li>Use flashlights—it can be dark out there!</li>
<li>Use reflective tape on costumes and bags to make it easier for drivers to see you.</li>
<li>Do not enter a stranger’s home, and only stop at well-lit houses.</li>
<li>Be careful of candles on walkways or in jack-o-lanterns and wear flame-resistant costumes.</li>
<li>Avoid masks that can block your vision, and use flexible props, like swords or staffs. Also stay away from long costumes that can get caught on things or trip someone.</li>
<li>And last but definitely not least, <strong>always</strong> check your child’s candy before they eat it! Only let them eat factory-wrapped treats, rather than homemade, and make sure you screen the candy for gluten content.</li>

<h3>Gluten Free Halloween Candy Guide:</h3>
<p>Halloween can be a scary time for parents of kids with Celiac Disease or other food allergies. To avoid your child getting sick make sure to thoroughly check their candy stock for any possible contamination. To help you get started, here’s a great list of <span style="text-decoration: underline;"><a href="http://celiacfamily.com/gluten-free-halloween-candy/" target="_blank">Gluten Free Halloween Candy</a></span>. However, when in doubt, always make sure to read the candy’s ingredient labels or check the manufacturer’s website.</p>
<p>To avoid any Halloween catastrophes, it may be a good idea to keep a (well-hidden) stock of gluten-free candy in your pantry, just in case your child’s trick-or-treating loot is largely uneatable. However, try to be sneaky about adding these to their bags since their own hard-earned Halloween candy is WAY more exciting than the regular ol’ candy you have at home!</p>

<h4><strong>Spooky Mud Sundae</strong></h4>
<p>Yields 6 Sundaes</p>
<ul>
<li>1 tub Udi’s Gluten Free Dark Chocolate Brownie Bites, slightly stale</li>
<li>2 cups whipped cream</li>
<li>Dark Chocolate Fudge, heated<a href="http://udisglutenfree.com/wp-content/uploads/2012/10/Halloweensmall.jpg"><img class="alignright  wp-image-4120" title="Halloweensmall" src="http://udisglutenfree.com/wp-content/uploads/2012/10/Halloweensmall.jpg" alt="" width="476" height="316" /></a></li>
<li>Vanilla Ice Cream</li>
<li>Gummy worms and gummy bugs</li>
</ul>
<p>&nbsp;</p>
<p><em>To make Mud:</em></p>
<ol>
<li>Add whipped cream to a medium-size mixing bowl.</li>
<li>In a separate bowl, crumble the brownie bites into small pieces. If you wish to make finer-textured “dirt,” use a food processor to mince the brownie bites into small crumbs. Leave 1-2 crumbled brownie bites for topping.</li>
<li>Add 1 tablespoon chocolate fudge to whipped cream and mix. Fold in brownie bite crumbs, being careful not to over-mix.</li>
</ol>
<p>&nbsp;</p>
<p><em>To assemble sundae:</em></p>
<ol>
<li>In a parfait glass, pour in 1-2 tablespoons of hot chocolate fudge, then add a scoop of vanilla ice cream. Pour 1-2 tablespoons chocolate fudge over ice cream, add a dollop or two of Mud. Repeat for one more layer.</li>
<li>Top with Mud, some crumbled brownie bites, and then arrange the gummy worms and bugs so they look like they’re crawling out of the ground.</li>
<li>Arrange sundaes on a tray draped with white cheesecloth and mini cauldrons full of dry ice for a really spooky effect!</li>

<h4><strong>Caramel Apple Dip</strong></h4>
<p>&nbsp;</p>
<ul>
<li>1 package cream cheese</li>
<li>1 cup dark brown sugar</li>
<li>1 teaspoon vanilla extract</li>
<li>½ cup marshmallow fluff (crème)</li>
<li>Brown sugar for crust and mini chef blowtorch (optional)</li>
<li>Caramel sauce topping (gluten free)</li>
<li>3-4 Granny Smith apples, sliced</li>
</ul>
<p>&nbsp;</p>
<p><em>To make dip:</em></p>
<ol>
<li>Add softened cream cheese to a large mixing bowl. Using a hand mixer on medium-low speed, slowly mix in dark brown sugar and vanilla extract. Fold in marshmallow fluff. Scoop into bowl, smoothing the top of the dip.</li>
<li>Optional Step: after smoothing the dip, sprinkle brown sugar in a thin layer over the top. Using the chef blowtorch on the low setting, crystallize the brown sugar into a thin crust.</li>
<li>Drizzle caramel sauce over the top, and arrange apple slices on a plate around the dip.</li>
<li>Enjoy!</li>

<p style="margin: 0in 0in 10pt;">On the Road by Heather Collins, Udi’s Gluten Free Foods</p>
<p style="margin: 0in 0in 10pt;">The past month has been another fun whirlwind traveling across the country for Udi’s Gluten Free Foods. I had the opportunity to attend several community health and wellness events, national food shows and then back home to my very own backyard gluten-free BBQ.</p>
<p style="margin: 0in 0in 10pt;"><strong>Life’s a Beach</strong></p>
<p style="margin: 0in 0in 10pt;">Blame it on the salt air or the Southern California ocean breeze, but I found myself with an ear to ear grin at a recent health and wellness event in Manhattan Beach. That’s where Udi’s partnered with Crofter’s Organic and together we introduced our very first peanut butter and jelly sandwich bar. Let me tell you, the Udi’s/Crofter’s sandwich bar was one happening spot. At one point, I remember looking up to see a dozen people standing in line patiently waiting to order up a personalized handmade and unique Udi’s Gluten-Free peanut butter sandwich, made by yours truly.</p>
<p style="margin: 0in 0in 10pt;">And we are not talking about your plain, old, ordinary PB&amp;J.</p>
<p style="margin: 0in 0in 10pt;">That’s right, we brought out all the fixins’ one could handle or that we could pile high on the sandwich. Check this out: five different varieties of nut butters from Justin’s (including allergen friendly options), organic fruit spreads from Crofter’s Organic, fresh fruit, gluten-free pretzels, gluten-free gummy worms, Udi’s Gluten Free granola and even gluten-free potato chips. Before we knew it, gummy worm and raspberry jam sandwiches were flying out of the booth. One gentleman, who was definitely in touch with his inner child, had the most original request o’ the day: almond nut butter with raspberry jam topped with gluten-free potato chips, fresh blueberries and chocolate chips. Of course, I had to try this combination too. It was sinfully delicious.</p>
<p style="margin: 0in 0in 10pt;"><strong>No Bun for You   </strong></p>
<p style="margin: 0in 0in 10pt;">On a recent trip to Chicago for the National Restaurant Show, our team went to dinner at a fun local hamburger dive. I love dives, especially salt of the earth kind of local establishments that you can taste the minute you walk in the room. After a day of traveling from the West Coast I was ready to sink my teeth into a juicy, bad for you greasy Midwest burger. As usual, I requested the gluten-free menu and the server proudly provided me with a list of gluten-free options. And there it was, “Hamburger or Cheeseburger – served gluten-free without a bun.”</p>
<p style="margin: 0in 0in 10pt;">The irony. All I wanted was an Udi’s Gluten Free Hamburger Bun on this thickly cut, perfectly grilled burger. I felt like I was living a scene from Seinfeld’s notorious ‘Soup Nazi’ episode. But instead of “No soup for you,” it was “No Bun for you!”</p>
<p style="margin: 0in 0in 10pt;">The next day at the Food Show I made it my mission to assist our sales team and talk to every single chef, food distributor and food buyer &#8211; basically anyone who would listen to me rave about our tasty and delicious gluten-free hamburger buns and why they need to serve our buns to gluten-free customers.</p>
<p style="margin: 0in 0in 10pt;">And guess what? As of today, you can FINALLY order a proper hamburger served on our hamburger buns at select national Red Robin Restaurants and the California-based Ruby’s Diner. It’s just the beginning. And I like it.</p>
<p style="margin: 0in 0in 10pt;"> <strong>Gluten Free – you, me…the whole family!</strong></p>
<p style="margin: 0in 0in 10pt;">When my crazy travel schedule affords me time at home in Denver, I love spending lazy weekends in the kitchen or at local farmers markets. Over Memorial Day weekend I had the good fortune of spending some quality time with my sisters, brother in law, parents and my 2 year old niece in the mountains. My father and I are the only ones who must eat gluten-free in the Collins clan, but that weekend everyone willingly participated in eating gluten-free.</p>
<p style="margin: 0in 0in 10pt;">To our surprise, having the entire family go gluten-free was quite easy and fun for us, which ultimately gave both me and my Dad peace of mind knowing our food would not face the risk of cross-contamination from other family members. I didn’t have to annoyingly ask my sister if the butter knife she had just used touched her favorite brand of gluten-filled bread or if a flour tortilla chip had been drudged through the guacamole or hummus. This sense of safety truly made me and my Dad feel more normal, which was also a sigh of relief at the dinner and breakfast table.</p>
<p style="margin: 0in 0in 10pt;">When I returned to the office after the three day weekend, I began to wonder what happens when an entire household must divide its food between the gluten eaters and non-gluten eaters.</p>
<p style="margin: 0in 0in 10pt;">Since I am single, it’s easy for me to control what’s in my cupboards and what I serve for dinner. I guess that’s one minor perk in the land of singlehood! Ha!</p>
<p style="margin: 0in 0in 10pt;">So, if my entire family can go gluten-free for a weekend, I bet yours can too! Try it, you might be surprised at how easy and stress-free gluten-free can be.</p>

			<content:encoded><![CDATA[<p>It has been a busy spring for our Udi&#8217;s Community Ambassadors! The combination of warmer weather and Celiac Awareness Month in May yielded a plethora of fun, gluten-free events all over the country. As I announced earlier, <a title="Udi's Gluten Free Foods" href="http://www.udisglutenfree.com" target="_blank">Udi&#8217;s Gluten Free</a> is a national sponsor for the <a title="Making Tracks for Celiac" href="http://www.celiacwalk.org" target="_blank">Making Tracks for Celiac walks</a>, and attended seven walks, all of which were huge successes for both the participants and <a title="Center for Celiac Research" href="http://www.celiaccenter.org/" target="_blank">University of Maryland Center for Celiac Research</a> (they raised over $96,000 for the Center!).</p>
<p><img style="margin-left: 20px; margin-right: 20px;" title="Making Tracks for Celiac - Syracuse" src="https://cdn2.content.compendiumblog.com/uploads/user/e4b9ceb7-10f5-42f4-ade6-ce1075b1ccc9/5986df50-b70c-496e-b2be-db365fbecfd4/Image/c59712e632d4e6faaf9a3e383620f265/making_tracks_syracuse.JPG" alt="Making Tracks for Celiac - Syracuse" width="250" height="188" align="left" />On May 1, Carolyn S. handed out samples of our granola to runners and walkers at the inaugural Arlington, Virgina Celiac Walk. Additionally, on May 22, she helped our Healthcare Outreach Director, Sarah Lapp, make toast with jam and bagels with cream cheese for participants at the 10th Annual Walk in Baltimore, Maryland. One day earlier, on May 21, Beth L. and Jan  T. not only sampled our muffins and bagels, but also put together a beUDIful gift bag (containing our new buns and ancient grain breads!) for the silent auction in Tri-County, Michigan.</p>
<p>In addition to the Making Tracks for Celiac walks, our ambassadors have been busy sampling our new Hamburger and Hot dog buns at various gluten-free BBQs. On May 15, Ashley M. brought the new buns to the Annual Indiana Gluten Free Summer Potluck in West Lafayette, Indiana, where she said, &#8220;everyone raved over the hamburger and hot dog buns. They were excited to be able to eat a normal bun again.&#8221;<br />

In Tampa, Florida, Katrina brought buns to the Tampa Gluten Free Friends Memorial Day BBQ potluck. People were able to enjoy their delicious gluten-free hamburgers, chicken burgers and hot dogs without any fear! This past weekend, Regan, our Ambassador Coordinator for the West, attended the CSA Summer BBQ here in Denver, Colorado and served up <a title="Canino Gluten Free Sausage" href="http://www.caninosausage.com/" target="_blank">Canino&#8217;s Sausages</a> (a local GF sausage company) in Udi&#8217;s buns. Meanwhile, in Warner Robbins, Georgia, Pam A. sampled Udi&#8217;s Hot Dog buns and cookies at the GIG of Middle Georgia Summer Picnic.</p>
<p>As the summer progresses, we plan to continue supporting gluten-free BBQs happening all over the nation. Look for Udi&#8217;s Q&#8217;s where we&#8217;ll be grilling GF delights in Florida, New York, California and many more places. Furthermore, if you&#8217;re planning on or want to throw an Udi-Q for your community, we want to help out. We know that there is nothing better than grilling with your friends and family on a hot summer night, and now, we can help you do so gluten and worry-free!</p>
