Easy Chicken Enchilada Soup Bake
* Boneless, skinless chicken breasts
* Bread crumbs made with Udi's Gluten Free Bread
* Progresso Gluten free Chicken Cheese Enchilada Soup
* Mozzarella or Mexican/American shredded cheese
* Cooked white rice
1. Bread the chicken breasts with the bread crumbs.
2. Lightly brown the chicken in a nonstick pan.
3. Place chicken in a glass baking dish and cover with Progresso Gluten free Chicken Cheese Enchilada Soup. Add onion to taste.
4. Bake approximately 45 min or until chicken is done.
5. Shredded cheese may be added to the top 5 minutes before removing from oven.
6. Serve over rice.
