Kathleen & Matt’s Yam Enchiladas – New Face of Gluten Free Winner




  • 4 Yams; skinned & stemmed
  • 8oz of Red Bell Pepper spread (Such as Trader Joe's Red Pepper Spread)
  • 4 Corn tortillas or Udi's Gluten Free flour tortillas
  • Salsa Verde
  • Gorgonzola Cheese


After skinning and steaming yams, mash up in a bowl with the bell pepper spread.  Place mixture onto the tortillas, roll tortillas up and place into the baking dish.  Pour desired amount of salsa and cheese on enchiladas, place in the oven for 20 minutes @ 375degrees.  It's that simple and delicious!
