Oatmeal Cream Pies
Prep Time: 5 minutes Servings: 5 cream pies
- Udi’s Oatmeal Raisin Cookies
- ¾ stick of butter
- 1 C confectioners sugar
- 1 tbl of heavy cream
- Using a handheld or stand mixer with a paddle or whisk attachment, beat butter on high speed until creamy, about 1 minute.
- Add the confectioners' sugar and beat on medium speed for 1-2 minutes. Pour in heavy cream and beat on high for 2-3 minutes until fluffy.
- Spread the cream filling on the bottom of a cookie and place another one on the top.
