Regan's Roasted Garlic-Parmesan Mashers




2 garlic bulbs
Olive oil
3 pounds potatoes, peeled and quartered
2 teaspoons salt, divided
1/4 cup whipping cream
1/4 cup sheet grated Parmesan cheese
3 tablespoons butter or margarine
1/3 cup chopped fresh parsley
1/2 teaspoon pepper


Serves 8 -Remove skins from potatoes. Dice potatoes into 1-inch cubes. Bring a large pot of water to a boil and add potatoes. -In the meantime roast your garlic in a garlic roaster or heat your over to 350 degrees, remove the tip of the garlic bulb, leaving tops of cloves exposed, drizzle with olive oil, and wrap in aluminum foil. Cook the garlic for about 1 hour. -Once the potatoes are nice and tender (can be pierced easily with a fork) drain and add to a stainless steel bowl. -Add the butter or margarine, whipping cream, parsley, salt, pepper to the potato bowl and mash with a potato masher or hand blender until the potatoes are nice and creamy. -Top potatoes with the sheets of grated parmesan cheese and serve.
