Seafood Gumbowich




4 Udi’s Hamburger buns
2 T butter or margarine
8 oz. cooked salad shrimp
4 oz. lump crab meat
1/2 C thinly diced red onion
1/2 C roasted red pepper, diced
2/3 C drained pickled okra, cut ( check label for gluten-free)
1/2 tsp. gluten-free cajun or creole seasoning
1 tsp. extra virgin olive oil
4 lettuce leaves, dried
8 yellow cherry tomatoes, halved

3 T horseradish sauce, gluten-free


1. Open Udi’s hamburger buns into halves, butter and toast under broiler or in oven until golden. Set aside.
2. In a medium bowl, combine shrimp, crab, onion, red pepper and pickled okra. Sprinkle with seasoning and oil. Toss well.
3. Place equal amounts of seafood gumbowich filling on bottom of each bun. Top with lettuce leaf and tomato halves. Optionally, you can spread a little of the horseradish sauce on the top half of the bun before closing.
