      • 1 1/2 cup Homemade Gluten-free Breadcrumbs (made with 5 slices Udi's Whole Grain Bread)
      • 2 Eggs beaten
      • 1/3 cup Gluten-free Flour
      • 1 tablespoon Chili Powder
      • 1 1/2 teaspoon ground Cumin
      • 1 teaspoon Kosher Salt
      • 1 teaspoon freshly-ground Black Pepper
      • 1/2 teaspoon Smoked Paprika
      • 1/4 teaspoon Garlic Powder
      • 1/4 teaspoon Onion Powder
      • 1/4 teaspoon Crushed Red Pepper (Chile Flakes)
      • 1/4 teaspoon Oregano
      • 1 1/2 pounds Chicken Tenderloins rinsed (leave moist; do not dry)
