Toasted Pistachio-Cheese Arancini

 
 
       

 

Ingredients

  • 2 tablespoons + ½ tablespoon unsalted butter
  • 1 small onion, chopped
  • 1 1/4 cups Arborio rice (about 10 ounces)
  • 1/2 cup dry white wine
  • Pinch of saffron threads, crumbled
  • Salt and freshly ground black pepper to taste
  • 3 cups chicken stock or low-sodium broth, warmed
  • 3 tablespoons freshly grated Parmigiano-Reggiano cheese
  • 1/2 tablespoon ulti-purpose Gluten Free King Arthur’s flour, plus more for dusting
  • 1/4 cup plus 2 tablespoons milk
  • Pinch of freshly grated nutmeg
  • 4 ounces fresh mozzarella, finely diced
  • 1/4 cup plus 2 tablespoons pistachios, chopped, salted
  • 2 tablespoons frozen baby peas, thawed
  • 2 large eggs, beaten
  • 1 1/2 cups Udi’s White Bread, toasted, processed into Crumbs
  • Canola oil, for frying

Directions

  1. In a large saucepan, melt 2 tablespoons of the butter.
  2. Add the onion and cook over moderate heat, stirring, until lightly browned, about 7 minutes.
  3. Add the rice and cook, stirring, until well coated with butter.
  4. Add the white wine and saffron, season with salt and black pepper and cook, stirring, until the wine is absorbed, about 2 minutes.
  5. Add the warm chicken stock 1/2 cup at a time and cook, stirring constantly between additions, until it is absorbed. The risotto is done when the rice is al dente, about 25 minutes total. Stir in the grated cheese, transfer to a bowl and let cool.
  6. PISTACHIO FILLING: Melt the remaining 1/2 tablespoon of butter in a small saucepan. Add the 1/2 tablespoon of flour and whisk constantly over moderate heat for 1 minute. Add the milk and cook, whisking, until thickened. Season with the nutmeg, salt and black pepper and transfer to a bowl to cool completely. Stir in the mozzarella, pistachios and peas.
  7. Line a large baking sheet with parchment paper.
  8. Put the eggs, bread crumbs and flour for dusting in 3 separate shallow bowls. Using lightly moistened hands, shape the rice mixture into 16 equal balls.
  9. Working with one ball at a time, make an indentation in the center with your finger and press the sides to make the hollow larger.
  10. Spoon a heaping teaspoon of the pistachio filling into the hollow and press the risotto around the filling to enclose it.
  11. Transfer the ball to the baking sheet. Repeat with the remaining risotto and filling. Dust the arancini with flour, tapping off the excess.
  12. Coat them with the egg and roll in the Udi’s Bread crumbs from the white bread.
  13. In a large, deep skillet, heat 1 inch of vegetable oil to 350°. Fry the arancini over moderate heat, turning occasionally, until golden and heated through, 8 minutes. Drain the arancini on paper towels and serve hot.
 

Make Ahead: The fried arancini can be refrigerated overnight; reheat them in a low oven until crispy.

Udi’s Gluten Free Kale and Sausage Deep Dish Pizza

 
 
       

 

Ingredients

  • 1 package Udi’s Gluten Free French Baguette
  • 1 teaspoon olive oil
  • 1 small onion, chopped
  • ½ pound hot Italian sausage
  • 2 cups chopped frozen kale
  • 1 cup pizza sauce
  • 2 cups shredded mozzarella cheese
  • 6 basil leaves, torn

Directions

  1. Preheat over to 400°F.
  2. Slice loaves of bread in half lengthwise. Pull out insides of bread, hollowing loaf half. Repeat step with other piece.
  3. In a large non-stick skillet, heat olive oil over medium-high heat until shimmering. Add onion and sauté until golden, about 3 minutes. Add sausage and using wooden spoon, break into pieces, stirring constantly until cooked through, about 8 minutes. Add kale, sauté for another 2 minutes until heated through.
  4. Place bread halves on rimmed baking sheet and bake for about 5 minutes to toast bread. Sprinkle cheese on bread, top with sausage, onion and kale filling. Spread sauce over filling and top with cheese again; repeat steps with remaining half. Bake for about 10 minutes, until cheese is melted and bubbly. Top with torn basil.
