Udi’s Gluten Free Flatbread w/ Tomatoes, Ricotta, & Artichokes

 
 
       

 

Ingredients

-2 Udi's Gluten Free 9" Pizza Crusts
-1 28 oz. can fire-roasted whole tomatoes-drained, quartered lengthwise, and seeded
-1 bottle marinated artichokes, drained (generally 9.9 oz.)
-1/2 cup fresh part-skim ricotta
-2 garlic cloves
-1 tbsp. dried basil
-4 tbsp. extra virgin olive oil (or your preferred oil)
Freshly ground pepper, to taste
Balsamic vinegar to drizzle

Directions

Serves Six to Eight -Pre-heat oven to 400 degrees Fahrenheit. Place tomatoes on a lined baking sheet. Sprinkle with dried basil, 2 tablespoons oil, and smashed garlic cloves. Roast in center of the oven for 15 minutes. -Spread 1/4 cup ricotta cheese on both pizza crusts and top with tomatoes and artichokes. -Bake for about 7 minutes until the pizza crusts are browned at the edges. Remove from oven & sprinkle the pepper to taste and the balsamic vinegar to taste.
