Gluten Free Wheat Free Recipes: Spiced Chickpea & Feta Sandwiches

1-15 oz. can low-sodium chickpeas (rinsed & drained)

3/4 tsp. gluten free chili powder

1/2 tsp. gluten free ground cumin

1 tsp. ground corriander

1 1/2 tsp. minced garlic

4 tsp. lemon juice

1 tbsp. extra-virgin olive oil

2 medium tomatoes

8 slices Udi’s Whole Grain Bread (gluten free & dairy free)

16 large basil leaves

1/2 cup grated carrot

Combine first 7 ingredients in food processor.

Spread mixture on four slices of gluten free bread, top other four slices of bread with sliced tomato, grated carrot, and torn basil leaves. Press breads together & serve. (Serves 4)

This recipe is celiac diet friendly and casein free.
