Zucchini Pizza on the Grill from Udi's Gluten Free Bakery

1 9-inch Udi’s Gluten Free Pizza Crust

1 1/2 cups wheat free tomato sauce

4 oz. shredded fresh mozzarella (use casein free cheese for GFCF)

4 packed cups grated zucchini (about 5 small zucchini)

1/4 tsp. crushed red pepper flakes

1/2 tsp. fennel seed

1/2 tsp. coriander seed

1/2 tsp. salt

1 tsp. freshly ground black pepper

1/2 tsp. paprika

oil to coat pizza

gluten-free garnishing of your choice

  • Combine zucchini with the six following ingredients, and allow marinating for two hours, tossing every 20 minutes.
     
  • After two hours drain zucchini mixture, and preheat grill.
     
  • Brush both sides of the pizza crust with olive oil. Grill one side of pizza for one minute. Flip and add tomato sauce, zucchini mixture, and cheese.
     
  • Cover grill for 3-4 minutes, and when your crust is nice and crispy add garnishing and enjoy.
