After more than a decade of misdiagnosis, I found out I had Celiac disease. The one thing I couldn’t seem to replicate from my old diet was a bagel. Not just a bagel, but a decent gluten free bagel. After trying just about every one I could find, I thought it was never going to happen.
I started hearing about Udi’s Gluten Free and tried searching them out to no avail. Finally, while visiting a friend northwest of here I found them. They were totally defrosted by the time I got them home, so I had to eat one immediately.
Huzzah! It was worth the drive. Now I just need to convince my local grocery store to carry them. Help. I’m having Udi withdrawals!
