Udi's & the Allergen Free Wedding
Thanks to Lisa from “Lisa Cooks Allergen Free” and Udi’s Gluten Free Foods two people with gluten intolerances were able to have a completely gluten-free wedding, and get this: their guests couldn’t even tell the gluten forgot to RSVP.
Two specialties from Lisa that we are drooling over include her “Traditional Bruschetta” and “Barbeque Pulled Pork topped with caramelized Onion Grenadine Jam,” both on our gluten-free bread.
Lisa states, “We used Udi’s Bread for the base, brushed with olive oil and sprinkled with garlic powder, Udi’s was perfect!”
Here is Lisa’s recipe for Udi’s Bruschetta:
“1 pound fresh tomatoes, diced
3 ounces onions, diced
¼ cup fresh basil, chopped
1 tablespoon garlic, minced
½ cup extra-virgin olive oil
Kosher salt to taste
ground pepper to taste
4 slices rice bread, toasted
½ teaspoon granulated garlic
- Preheat broiler to 350°F.
- Brush bread with extra virgin olive oil, sprinkle with granulated garlic and bake for 5 minutes on each side. Set aside.
- In a large bowl, mix all remaining ingredients.
