Traveling can be difficult for anyone. Throw in Celiac Disease, a gluten intolerance, or other food allergies and traveling can become enough to make Christopher Columbus, the great explorer, weep! But, despair not! Gluten-free traveling is possible, even enjoyable with a few tips and tricks.
Let me preface this article with a little background on how I became a GF travel expert. My job is 90% travel, I live out of my suitcase and have been doing so for close to 4 years. I also have Celiac Disease. With such an active travel schedule, getting sick is not an option. I have learned a few tricks to keep gluten away so I can play.
Here is my list of essentials for the gluten-free road warriors out there, and continue reading for my hotel room chicken soup recipe!
- Triumph Dining Cards – Available in multiple languages for multiple cuisines, these pocket size cards provide restaurant servers and cooks with a concise tutorial of Gluten and how to avoid cross contamination.
- Find Me Gluten Free – This free App is an excellent resource for finding area restaurants that are able to accommodate a gluten-free diet. The App even allows you to narrow your search by specifying restaurants with gluten-free, vegetarian, and dairy-free friendly menus!
- Light My Fire Camping Spork and a Bowl– A safe restaurant is not always within reach. When this happens, survival mode kicks in. It is amazing what culinary delights can be created in a hotel room with little more than a coffee pot and a Spork! This all in one utensil slices, dices, spears, and scoops, and has saved me on many occasions.
- Can Opener – You never know when you will need to open a can. Trust me on this one.
- Protein Powder and Bars – Easily transported and healthy, protein powders and bars are a quick meal in a pinch.
- Tuna Fish – Whether canned or a pouch, plain tuna is an easy, throw in your bag, meal that can dress up even the saddest of garden salads.
- Grocery Stores – It’s not the most glamorous dining establishment, but it is the safest. Find your nearest grocery store and stock up on prewashed lettuce, salsa, hummus, gluten-free crackers, tuna, and fruit. If you are staying in a hotel, ask for a mini-fridge to keep your food fresh.
These days, I tend to bypass the restaurants in favor of a local natural food store where I am able to buy fresh ingredients to make amazing salads (Southwestern Salads made of greens, vegetables, tofu, and topped with salsa are my favorite). Sometimes, though, I crave something warm and comforting, like soup. A microwave isn’t always available, so I have learned to make Chicken Vegetable soup in a coffee pot. Yes, you read that correctly. Here is my recipe. Next time you are feeling particularly “road warrior-esque” give it a try!
Coffee Pot Chicken Vegetable Soup
- 1 8oz container Chicken Broth
- 1/2 cup frozen Vegetables, defrosted
- 1 can cooked Chicken Breast Meat, drained
- Salt &Pepper, to taste
1. Clean out the coffee pot by running water through it 2-3 times.
2. Place the defrosted vegetables and the chicken in the coffee pot carafe and place the carafe back on the warming pad.
3. Pour the chicken stock into the coffee pot’s water chamber.
4. Turn on the coffee pot and percolate the chicken broth through the machine and into the pot, as if you we’re making coffee.
5. Once the brew cycle is complete, the soup will be hot and ready.
6. Season with salt & pepper, to taste.
