Ingredients

This Moroccan Simple Gluten Free Stuffing recipe originally appeared on Food Faith Fitness, in partnership with Udi's Gluten Free.

  • 3 Tbsp Extra-virgin olive oil
  • 1 Vidalia onion, diced (I use my food processor)
  • 3 Cups Apple, diced (about 2 large apples - I like Fuji)
  • 1 Tbsp Fresh ginger, minced
  • 1 Tbsp Ground cinnamon
  • 1 Tbsp Ground cumin
  • 1/2 tsp Paprika
  • 1/4 tsp Ground allspice
  • 1 Loaf Udi's Gluten Free Cinnamon Raisin bread, cut into 1 inch cubes *
  • 1 1/4 tsp Sea salt
  • 1/2 Cup Cilantro, roughly chopped and tightly packed
  • 1/2 Cup Dried apricots, diced
  • 1/2 Cup Golden raisins
  • 1 Cup Reduced-sodium chicken broth
  • 2/3 Cup Pure apple juice
  • 1/3 Cup Roasted salted pistachios, roughly chopped
