Udi’s Turkey Pesto Grilled Cheese

 
 
       

 

Ingredients

  • 2 slices of Udi's Gluten Free Bread (we enjoy the white sandwich bread)
  • 3 slices roasted turkey
  • 2 tbsp. pesto
  • 2 slices smoked Gouda
  • 1 tbsp. pine nuts
  • Optional; 5 sundried tomatoes
  • Butter

Directions

  1. Preheat skillet over medium heat.
  2. Spread the pesto on both slices of bread. Assemble the sliced turkey, smoked Gouda, toasted pine nuts, and sun-dried tomatoes on prepared bread.
  3. Butter the bread and grill until lightly browned. Flip over and repeat on other side until cheese is melted.

Roasted Beet and Goat Cheese Tartine

 
 
       

 

Ingredients

Thinly sliced roasted beets topped with peppery watercress and creamy goat cheese on top of flax seed toast for a healthy and divine mid-afternoon meal.

Directions

  1. Preheat the oven to 425°F.
  2. Wrap the beet in foil and roast for 45 minutes until tender.
  3. Once cooled, remove the peel with your hands and discard. With a knife, slice into thin slices.
  4. Toast the bread until golden.
  5. Top evenly with goat cheese, beet slices, and watercress.
  6. Drizzle with olive oil and season with a pinch of salt and pepper. Serve.
This recipe can easily be duplicated.
